In a new kitchen area,
created by the architect V. HOUBA in April 2001,
Jean-Louis MATHY discloses to us the secret of one of his creations:
Le pavé de Fosses.
Degree of difficulty: difficult (for experienced amateur cooks) |

Ingredients : for six people :
*200 g puff pastry, 400 g macaroons, 5 cl Bierçac (apple brandy by the Biercée
distillery), 1 egg, 10 cl cream, 2 tablespoons light-brown cassonade sugar (refined once),
1 tablespoon fine granulated sugar, 1 egg yolk, 20 g melted butter.

Recipe :
Crush the macaroons and moisten with the Bierçac. Lightly spread out the puff pastry in a
rectangular non-stick baking tin measuring 16 by 12 cm. Keep a small quantity of pastry
aside for covering. Pierce the pastry on the bottom of the tin with a fork, dust with
cassonade sugar and place the macaroons on it. Pour a mixture of egg and cream (custard)
over the entire preparation and finish off by dusting again with cassonade sugar. Cover
with the remaining pastry, then glaze the preparation with egg yolk. Make thin cuts in it
and powder with fine sugar. Finally bake in the oven at 180° for 50 minutes.
Once the pastry is ready, cut it into slabs approx. 5 by 5 cm, place a slab in the middle
of a plate and decorate according to taste. Enjoy your dessert.

Have you tasted the "slab" of Fosses-la-ville? No? Well, neither had I...
That is why I decided to pay a surprise visit to the creator of this pastry of which people
had told me such wonderful things.
It was a "bon vivant" Jean-Louis Mathy who welcomed me holding in his arms ... his
famous sugared "slab". This preparation that should be eaten lukewarm is in fact a
slab of puff pastry stuffed with crushed macaroons, custard and light-brown cassonade sugar.
The macaroons are also home-made. I tasted it for you... and had to hold myself back in order
not to shout "More!". |
